1 and 1/2 cups of sugar

Peel the oranges, removing the thin, white skin carefully
Cut the peels into fine strips
Place a good amount of water in a pot and let it boil
Add the peels and simmer for a bit
Drain
Repeat this process 3 times
In another pot, combine sugar, 1/2 cup of water, and the cooked peels
Cook until the mixture reaches a soft-ball stage
To test the consistency, place some of the syrup in a cold-water bath
If it forms a ball that doesn't hold its shape, it's ready
Remove from heat and stir well until the sugar starts to crystallize
Pour onto a greased surface and mix with 2 forks until the strips become loose and caramelized
Store in an airtight container
Serve with a cup of tea or coffee
