1/2 cup grated Parmesan cheese
2 tablespoons olive oil
2 tablespoons annatto seed paste
2 tablespoons chopped cilantro
1/2 pound crab meat, flaked
4 eggs
2 tomato halves, seeded and chopped
2 cloves garlic, minced
1 onion, finely chopped
Salt and black pepper to taste
Optional ingredients: 15 crab cake molds

Heat the olive oil and annatto seed paste in a pan and sauté the onion, garlic, cilantro, and tomatoes

Add the crab meat and stir for a few more minutes

Season with salt and black pepper to taste

Place the mixture into the crab cake molds

Beat the eggs until they froth and pour over the crab mixture

Sprinkle grated Parmesan cheese on top and bake in the oven at 375°F for 5-7 minutes
Optional: garnish with paprika.
