6 fish or sardines
1 tablespoon lemon juice
1 tablespoon butter or margarine
1 medium onion, chopped
3 tomatoes, seeded and cut into small cubes
salt and black pepper to taste
2 tablespoons chopped fresh parsley

Rinse the fish with lemon juice
Preheat oven to high heat (220°F)
Melt butter or margarine and sauté onion for 5 minutes, until softened
Turn off heat and add tomato
Clean the fish and place them in a baking dish greased
Add tomato with onion on top of the fish and season with salt and pepper
Put in oven and roast for approximately 20 minutes
Before serving, sprinkle with parsley
Serve 4 portions.
