1/2 cup coconut milk
1/4 cup olive oil
1/4 cup finely chopped green onion
3 tablespoons lime juice
2 tablespoons grated ginger
1 tablespoon salt
4 fish fillets (striped bass or tilapia)
3 cloves of garlic, minced
3 cherry tomatoes, seeded and chopped

Preheat the oven to 375°F
In a microwave-safe dish, combine the olive oil, onion, garlic, and cherry tomatoes
Microwave on high for 3 minutes
Add the coconut milk, ginger, salt, and lime juice
Mix well
Add the fish fillets and season with the marinade
Place in the oven at medium heat for 10 minutes
Check if the fish is cooked and flakes easily with a fork
Remove from the oven, sprinkle with chopped green onion, and serve.
