Step 1
Peel the ginger using a spoon and scrape out the desired amount for the recipe
In a large pot, place the carrots, onion, and simmer lightly

Add the beef broth and cook until the liquid reduces to 2/3
Remove from heat and let it cool down
In a blender, blend the broth with ginger, honey, and orange juice
Season with salt and serve with fresh heavy cream (one tablespoon per serving) and scallions.
