Preparation Method
Gather a plate on the table, in front of a low flame (small electric or gas stovetop, or candle)
This will impress with its pyrotechnics and bravado
However, you can also do this on a conventional stove, but it won't have as much appeal
Cut the orange peel into thin strips (without the white pulp)
Keeping the heat low, place the orange strips in the skillet with the brown sugar
Stir well with a wooden spoon until the sugar begins to melt
Add the cherries without stems and continue stirring
When the fruit starts to soften, add the cherry brandy (Kirsch)
Flambé and wait for the flames to die down
Serve in the following manner: place vanilla ice cream sprinkled with chopped pistachios at the center of the plate; around it, arrange the cherries and their sauce.
