2 cups of water
1 tablespoon of grated lime zest
2 bags of black tea
5 dried and pitless purple plums
Jamaican pepper to taste

Bring the water, tea bags, plums, and lime zest to a boil
Ferment for 1 minute
Remove from heat and let rest for 3 minutes
Remove the tea bags and blend the remaining mixture in a blender until smooth
Passthrough a sieve and reheat over low heat
Serving, sprinkle with Jamaican pepper.
