Peel the mache and remove the seeds
Cutter into sticks, not too fine
In a saucepan, melt the sugar over medium heat, stirring constantly, until caramelized
Add the mache, cinnamon, and lemon zest, and stir until dissolved
Let cook for 10 minutes or until the syrup reduces slightly
Remove from heat and add the jam, mixing well

Preheat oven to medium temperature
Brush the bread slices with butter and cut into rectangles to line the sides of the mold and triangles for the bottom
Set aside some slices to cover the filling
Fill the cavity of the mold with the mache mixture and cover with the reserved bread
Bake in the oven for 15 minutes or until the bread is golden
Remove from oven and unmold onto a plate
Dust with sugar and serve.
