2 1/2 cups of wheat flour
4 eggs
1 egg yolk
1/4 cup of fresh pork cracklings, grated, or bacon
1/2 teaspoon of cinnamon
1 pinch of salt
1/2 teaspoon of grated lemon zest
2 cups of oil
1 1/2 cups of honey
1 tablespoon of grated orange zest
1/2 cup of candied citrus peel and citron, finely chopped
2 1/2 cups of wheat flour
4 eggs
1 egg yolk
1/4 cup of fresh pork cracklings, grated, or bacon
1/2 teaspoon of cinnamon
1 pinch of salt
1/2 teaspoon of grated lemon zest
2 cups of oil
1 1/2 cups of honey
1 tablespoon of grated orange zest
1/2 cup of candied citrus peel and citron, finely chopped
Moon the flour on a smooth surface, make a depression in the middle, and add the eggs, egg yolk, pork cracklings (or bacon), cinnamon, salt, and lemon zest
Mix well
Work the dough with your hands until it's well combined
Roll out the dough into thick ropes about the size of a pencil, then cut them into 1 cm pieces (to make it easier, roll out 4 or 5 ropes, place them parallel to each other, and cut them all at once)
Fry them in hot oil in batches until they're golden brown
Combine the honey, grated orange zest, and candied citrus peel and citron in a saucepan that can hold the dough rolls with some room to spare
Bring it to a boil, then reduce heat and let it simmer
Add the fried dough pieces and stir well, without crushing them, until the honey is fully absorbed and the mixture comes away from the sides of the pan
Scoop the dessert onto a greased surface, shape it into a ring with a hole in the middle using 2 spoons greased with oil
Dust with powdered sugar and let cool before serving
If desired, add 2 tablespoons of melted chocolate to the honey mixture before bringing it to a boil
Note: If you like, you can also add 2 tablespoons of grated orange zest to the honey for added flavor.
