In a pot, bring the milk to a boil and then add the well-rinsed rice and grated lemon zest
Let it simmer for about 15 minutes; afterwards, add the sugar and let it come to a boil again
Let it sit over low heat until the rice is cooked but not mushy
Remove from the heat and pour the sweet rice into a bowl where the eggs have been placed, stirring well
Put it back on the heat to thicken and cook the eggs.
