Directions

Mix the sugar and cornstarch in a saucepan

Strain the pineapple and add it to the syrup along with the sugar and cornstarch

Mix well

Add the lime juice and mix thoroughly

Cook over medium heat, stirring until the mixture thickens and becomes transparent

Simmer for 2 minutes

Add the chopped pineapple and butter

Remove from heat and let cool
