In a glass bowl that can be placed in a hot water bath, combine the sugar, cold water, egg whites, corn syrup, and salt
Beat for 30 seconds to mix
Place over a pan of boiling water, but do not let the water touch the bottom of the bowl
Beat at high speed for 7 minutes or until the meringue holds its shape when lifted with a spatula
Remove from heat
Add vanilla and beat for an additional 2 to 3 minutes to achieve spreading consistency
Variations: Chocolate - Prepare the recipe above and, just before adding the vanilla, add 1/4 cup of melted chocolate and 1/2 teaspoon of instant coffee
Mascavo Sugar: Use 1 1/2 cups of mascavo sugar instead of regular sugar.
