Grease a smooth surface with butter
In a large saucepan, bring all the ingredients to a boil over high heat, stirring occasionally, until the sugar has dissolved and the mixture reaches a soft ball stage (test by dipping a spoon into cold water and shaping it with your fingers; if it forms a ball that can be shaped, it's ready)
Remove from heat
Separate the mixture into equal parts
In each part, mix in food coloring drops to achieve the desired color (if you want white coconut treats, don't add any coloring)
Using a spoon, scoop out portions of the mixture and distribute them on the greased surface, forming mounds
Let it cool completely
Remove the treats with a spatula and transfer them to a serving dish
Garnish with rosemary and serve
