Rinse the rabbit pieces with salt to taste
Place the bacon in a pan and fry it over low heat until crispy
Remove the bacon squares and set aside
Melt the fat, add the meat, and season it from all sides
Dust with flour and let it brown
Mix the red wine with beef broth and pour it into the pan
Season with lemon zest rind, black pepper, and reserved bacon squares
Let it cook until the meat is tender
Remove from heat and place in a serving dish to keep warm
Strain the sauce through a sieve
(If needed, bring the sauce to a simmer by adding a little flour dissolved in 1/4 cup of water.) Season with Fondor
Cook until slightly thickened
Pour the sauce over the meat and serve with rice
