10 large Paris mushrooms
2 tablespoons olive oil
1/4 cup finely chopped onion
1/4 cup grated carrot
4 cups chopped salted sausage/
1 tablespoon all-purpose flour
2 tablespoons water
1 small bell pepper, finely chopped
Salt to taste
6 leaves of fresh parsley
10 large Paris mushrooms

Remove stems from mushrooms and chop four of them into cubes
Reserve the rest
If the stems are soft, chop those too

Heat olive oil in a skillet over medium heat
Sauté onion for 1 minute
Add carrot and sausage and sauté for 5 minutes

Add chopped mushroom and cook until slightly tender
Add flour and fry for 1 minute
Add water and let it thicken for another minute
Add bell pepper and salt

Preheat the oven to high temperature
Arrange mushrooms whole on a baking sheet, greased and filled with the vegetable mixture
Bake in the oven for 10 minutes
Serve over parsley.
