6 tablespoons of chopped fresh parsley
salt and black pepper to taste

Scrape the mandioquinhas and cut them into slices
Cook them in boiling water until they're tender, but still firm
Drain
Melt the butter or margarine in a large skillet
Add the mustard and parsley, then the mandioquinha, and stir carefully until the mandioquinha is well coated
Sprinkle with salt and black pepper
Serve 4 portions.
