Dough: Mix the flours and make a well in the center
Place the yeast in the middle and, with one-third of the water, dissolve it, mixing it into the flours
Knead well until the mixture starts to double in volume
Add the remaining ingredients, except for the grated chocolate, and mix until a smooth and elastic dough forms
Let it rest for 15 minutes
Add the chocolate and work the dough again
Let it rest for another 15 minutes
Divide the dough into three equal parts and place the dove-shaped breads in paper-lined molds
Let it rise until the dough has increased and reached 3/4 of the capacity of the paper mold
Make the topping: Beat with a fork all the ingredients together
Spread with a brush over the surface of the doves and dust with confectioner's sugar
Bake in a medium oven until golden brown.
