Wash the figs
Place them in a pot covered with water mixed with baking soda
Let it simmer for 15 minutes
Turn off the heat, cover the pot and let it cool
After the figs have cooled, place them in a plastic bag and refrigerate
After refrigeration, remove and wash under running water, scrubbing well to remove skin
Make a small cross cut on each one so that the broth can penetrate into the figs
Place the figs back in the pot covered with water and let it simmer for 25 minutes
