Peel the mango and cut it into cubes
In a saucepan, combine the mango, blueberries, sugar, lime juice, ginger, citrus peel, and 1/4 cup of water
Bring to a boil over high heat
Reduce the heat and simmer until the fruit is tender and the liquid has thickened
Let it cool, then refrigerate or freeze if desired
This compote can be prepared up to 3 days in advance
To serve with waffles, remove the compote from the refrigerator and let it come to room temperature
