1 envelope of unflavored and unscented gelatin
5 soup spoons of cold water
1 can of diet peach syrup
1 cup of boiling water
2 soup spoons of oven and broiler spray
100g of pitted and chopped apricots
1/2 cup of raisins
Cream
2 cups of skimmed milk
2 soup spoons of cornstarch
2 eggs
Oven and broiler spray to taste
A pinch of vanilla extract, to taste

Hydrate the gelatin with cold water and reserve
Drain the peach syrup and reserve
Mix the peach syrup with boiling water, oven and broiler spray, apricots, raisins, and hydrated gelatin
Pour into a
moist refrigerator and refrigerate for at least an hour
Cream: In a saucepan, combine milk, cornstarch, oven and broiler spray, eggs, and vanilla extract
Heat over low heat, stirring constantly, until thickened
Let cool and remove from the refrigerator
Spread the cream over the gelatin and refrigerate for another hour
Remove again from the refrigerator and garnish with peach slices
Serve chilled.
