1 large beetroot (275 g), cut into four pieces

In a pressure cooker, cook the beetroot in enough water to cover it until tender (around 18 minutes after boiling)
Cut into cubes and reserve
In another pot with boiling water, cook the peas (2 minutes) and reserve
Do the same for the carrot and asparagus (both around 15 minutes each), cut into 2 cm pieces and reserve
In a large pot, heat 5 liters of water and 1 teaspoon of salt at high heat
In another large pot, sauté the garlic and onion in olive oil over high heat, stirring constantly until softened (around 3 minutes)
Add the lemon juice, heavy cream, salt, and cooked vegetables
Mix well and keep on low heat for around 7 minutes
Turn off the heat, cover, and reserve
Cook the macaroni in boiling water until al dente (around 8 minutes)
Drain, place in a large bowl, pour the reserved sauce over top, and mix well
Add all the cheese cubes, mix well, decorate with reserved asparagus, and serve immediately
