2 cups of vinegar
1 and a half tablespoons of lemon juice
1 tablespoon of salt
1 liter of water
8 artichokes
2 cloves of garlic
2 thyme sprigs
1 bay leaf

Discard the artichoke leaves and separate the bottoms (see how on the next page)
Place them in a bowl, cover with water and add half a lemon's juice. Reserve
In a pot, bring the water to a boil
Add the vinegar, salt, garlic, thyme, and bay leaf
Drain the artichoke bottoms and add them to the pot
Simmer for 30 minutes
Strain the contents of the pot through a sieve and let it drain for two hours
Transfer to a clean glass container
Cover with oil, seal and store in the refrigerator for two or three days before serving
