In a stand mixer, cream the butter and vegetable shortening until smooth
Add the egg and vanilla extract; mix well
Turn off the mixer; add the flour, baking soda, and salt
Mix until just combined
Stir in the rolled oats and chocolate chips
Use a spoon to mix thoroughly; cover with plastic wrap and refrigerate for 10 minutes
Form into balls and lightly flatten with your palms
Place on a large baking sheet lined with parchment paper, greased with a little butter
Bake at 375°F for 15 minutes or until golden brown.
