Beat the egg whites until stiff and firm
Add the sugar and continue beating until it forms a meringue-like texture
Refrigerate
Preheat the oven to 220°C

Place a ball of sorbet on top of each cookie
Arrange the cookies with sorbet on a baking sheet and cover them completely with meringue
Bake in the preheated oven for three minutes or until golden brown
Serve immediately.
