3 cups of strawberries
2 cups of sugar
1 tablespoon of fresh ginger juice
2 tablespoons of lemon juice
white wine or champagne

Blend the strawberries in a blender
Put them in a pan, add the sugar and simmer over low heat until they release their juices and form a paste
Remove from heat and stir in the ginger and lemon juices
Fill 1 tablespoon of the strawberry mixture into glasses filled with white wine or champagne
Serve immediately
Note: To obtain fresh ginger juice, grate it finely and squeeze well.
