Sauté the onion in a little olive oil, then add the peas and season with salt and pepper
Cook covered for approximately 5 minutes
Add the diced ham and cook for an additional 5 minutes
Set aside
While that's cooking, cook the macaroni according to the manufacturer's instructions
Drain and reserve 1/2 cup of the cooking water
Mix in a pan the ricotta cheese, egg yolks, and cooking water
Season with salt and pepper and add quickly to the dough
Transfer the dough to a round mold with a hole in the center, greased with butter, and press well
Let it rest for 5 minutes and carefully demold it
Place the sautéed peas in the center and on the sides, and serve with grated cheese.
