Remove excess fat from the beef ribs
Cut into bite-sized pieces and season with salt and thyme to taste
In a large skillet, heat the oil over medium-high heat
Add the chopped onion and cook until golden brown
Add the beef ribs, grated ginger, and water to the skillet
Cook for 5-7 minutes or until the meat is tender
Close the lid and simmer for an additional 30 minutes
Peel and slice the sweet potatoes into thick rounds
Heat the oil in a large skillet over medium-high heat
Fry the sweet potato slices until golden brown, about 3-4 minutes per side
Drain on paper towels to remove excess oil
Serve the beef ribs with the sweet potato fries and enjoy!
