1 chicken cut into pieces
4 cloves of garlic minced
2 chopped tomatoes
1 chopped bell pepper
1 onion sliced
2 tablespoons olive oil
1 cup hot water
3 tablespoons tomato extract
1 cup chicken broth (or chicken blood, if you can find it)
1 tablespoon vinegar
Salt to taste

Season the chicken with garlic and salt
Combine the tomatoes, bell pepper, and onion and let sit for two hours
Strain and reserve the marinade
Heat the olive oil and dredge the chicken pieces on all sides
Add the reserved marinade, hot water, and tomato extract
Cover the pan and cook over low heat until the chicken is tender
If necessary, add more hot water
Mix the chicken broth with vinegar and add it to the chicken
Simmer and serve immediately.
