1/2 pound pork loin
2 tablespoons wheat flour
salt
1 onion
garlic
black pepper
1/4 teaspoon ground nutmeg
1 tablespoon butter, margarine, or Clarified Butter
3 eggs
1 cup (chopped) soaked and drained breadcrumbs

Brown the pork with salt, black pepper, garlic, and onion
When well cooked, grind it in a meat grinder
Add the pan drippings, wheat flour, and a little water
Cook over low heat, stirring constantly, until a dough forms
Then remove from heat, add eggs, nutmeg, and breadcrumbs
Return to heat for another minute or two, stirring always
Let cool, shape into croquettes, dip in beaten eggs and then in breadcrumbs twice
Fry in hot vegetable oil.
