Cook the rice in 4 cups of boiling water with butter or margarine, salt, and pepper
Let it cook for 20 minutes, then add part of the grated cheese and let it cool
Pulse the mozzarella and ham through a meat grinder, combine with two eggs and the rest of the grated cheese
Make balls with the cooked rice and fill them with a spoonful of the mozzarella-ham mixture
Dip each ball in beaten egg mixed with 1 tablespoon of water, then coat in breadcrumbs and fry in very hot olive oil
