Lightly pound the pork cutlets and season with salt, black pepper, crushed garlic, and lemon zest
After an hour, scrape off any excess seasoning and coat the pork cutlets twice in beaten eggs and breadcrumbs
Fry them in hot peanut oil
Serve with lemon slices and accompanied by mashed potatoes, peas pureed in butter, margarine, or clairbelle.
