Season the pork chops with salt, black pepper, and lemon juice
Heat the olive oil in a pan and fry the pork chops, two at a time, until they're browned
Add the garlic and stir-fry until it's golden brown
Combine the mashed potatoes, vinegar, water, and fried pork chops
Let it simmer, covered, over low heat until the meat is tender
If needed, add more water to prevent the sauce from drying out.
