Use a meat grinder to grind the pork chops until they're finely textured
Season with salt and black pepper and set aside
In a medium skillet, melt the butter over low heat
Add the sage and cook until it's lightly browned (about 1 minute)
Increase the heat to high, add the pork chops, and cook for 1 minute on each side
Reduce the heat to low and cook until the meat is tender (about 15 minutes)
Transfer to a serving dish and serve
