For the dough
200g zucchini blossoms
1 pinch of salt
1 pinch of black pepper

60g brie cheese crumbles
1 tablespoon honey
1 egg, beaten
1 cup all-purpose flour for coating

Prepare the dough
In a large pot with plenty of water, cook the zucchini blossoms until tender
Drain and set aside
Add salt and pepper to taste, mix well, and reserve
Prepare the filling
In a bowl, mix together the brie cheese and honey until smooth. Reserve
Divide the dough into 15 equal portions
Make a cavity in the center of each portion, place some of the filling inside, and shape into blossoms
Dip each blossom into the beaten egg and then coat with flour
In a deep frying pan with plenty of olive oil, fry two blossoms at a time until golden brown
Drain on paper towels
Serve warm garnished with fresh thyme sprigs.
