Drown the beef in 1/2 cup of butter with chopped onions
Add salt and pepper: Cover
Let it cook slowly until the beef is tender
Cook the lettuce heads in boiling water for 3 minutes
Drain, then set aside
Separate the leaves
Add to the beef mixture
Let it cook slowly for a few more minutes
Add the remaining butter
Beat eggs together with lemon juice
Gradually add some of the beef liquid to the eggs, stirring quickly
Add the eggs to the braise, stirring constantly
Remove from heat
