For the dough
2 1/2 cups all-purpose flour (300g)
1 teaspoon salt
3/4 cup cold unsalted butter (150g), cut into small pieces
1/3 cup cold water (80ml)
For the filling
1 large onion (150g) chopped
4 cloves garlic minced
6 slices of smoked bacon (90g) chopped
12 tablespoons finely ground chicken breast (240g)
1 teaspoon chopped fresh parsley
2 teaspoons apple cider vinegar
5 medium-sized zucchinis (1kg), sliced into 0.5cm thick rounds

1 egg yolk lightly beaten (for brushing)

Make the dough: In a large bowl, combine flour, salt, and cold butter
Mix with your fingers until it forms a crumbly mixture
Add the water and mix slightly with your hands
Form a ball with the dough
Wrap in plastic film and refrigerate
For the filling: In a large skillet, cook the onion, garlic, and bacon over high heat, covered, stirring occasionally, until the onion is soft (about 5 minutes)
Add the chicken breast and parsley and mix well
Add the vinegar, mix, and remove from heat
Add the zucchini, season with salt, and mix well
Let it cool
Achieve the temperature of the oven to 400°F (200°C)
Roll out 1/3 of the reserved dough directly onto a 27cm diameter tart pan bottom
Use a knife to trim the edge of the dough and place the pan in the tart pan
Form small rolls with some of the remaining dough, pressing them gently into the sides of the pan
Trim the edges
Stuff the filling mixture into the dough-lined pan
Roll out the remaining dough and cut into strips 1cm wide
Place some strips over the filling, forming a fan shape
Form three flowers by rolling three strips, and press them onto the edge of the pan
Using the remaining dough, form a leaf shape and place it on one of the strip petals
Press the strips with your fingers onto the edge of the dough
Brush with the lightly beaten egg yolk
Bake in the preheated oven until golden brown (about 55 minutes)
Unmold onto a large plate and serve immediately
