Season the beef with garlic, black pepper, and salt
In a large pot, heat the olive oil over medium-high heat
Brown the beef until it is nicely browned
As the beef browns on the bottom of the pot, scrape it up with a spoon and add in one cup of water at a time, stirring to deglaze the pan
Add in three more cups of water, cover the pot, and bring to a boil
Then, reduce the heat and simmer for an hour
Add in the aboabora and remaining water
Simmer for 15 minutes, then serve with farofa made with chopped onion and scallions.
