Season the chicken with salt, half of the rice vinegar, garlic, black pepper, and onion

Peel the bark from the bamboo shoots, turnip, and carrot, then cut them into thick slices

Heat the sesame oil in a large pan and cook the chicken for 20 minutes or until browned
Add the chopped vegetables and half of the water and simmer over low heat for another two minutes

Cut the shiitake mushrooms into strips and add them to the chicken
Adjust the salt
Add the soy sauce

Peel and chop the lotus root, chayote squash, and macaroni-like shoots
Add them to the pan and simmer for 30 minutes
Cut the tofu and mustard greens into bite-sized pieces and add them to the stew with the bamboo shoots and broccoli flowers

Add the remaining water and rice vinegar, as well as ajinomoto
Simmer for another 15 minutes or until the vegetables are tender
If necessary, add a little more water
Before removing the pan from the heat, sprinkle chopped green onions.
