Melt the butter and fry the peaches and raspberries until tender. Reserve
Beat the egg and eggs with confectioner's sugar for 3 minutes or until smooth
Dissolve the cornstarch in heavy cream. Reserve
Heat the remaining heavy cream and whipped cream, then gradually add to the egg mixture
Add the dissolved cornstarch and the reserved fruits
Pour into individual ramekins and bake in a moderate oven with a water bath
Let cool
Just before serving, sprinkle with granulated sugar and place under the broiler to caramelize.
