In a large saucepan, fry the oil, onions, and garlic over medium heat until they start to brown
Add the yacon, cilantro, and black pepper
Stir well
Simmer for about 1 minute, stirring frequently
Add the chicken broth, stir well, and increase the heat
When it starts to boil, reduce the heat and cook, stirring occasionally, until the liquid evaporates and forms a creamy texture
Check the seasoning and add salt if needed
