1 Beat the eggs until smooth and reserve
Heat a non-stick skillet over medium heat, and pour in the egg mixture
With a spatula, make sweeping motions from the edges to the center as the omelette cooks
2 When the omelette is almost set but still slightly runny, sprinkle with salt, pepper, and nutmeg
3 Spread the ground beef, mushrooms, and scallion on half of the omelette, tilt the skillet over a plate, and let it slide onto the plate
Close the omelette to form a semicircle
Serve immediately.
