2 slightly beaten eggs
1/4 cup and 1 tablespoon of sugar
2 cups of milk
1 tablespoon of unsweetened gelatin
1 tablespoon of cold water
1 1/2 tablespoons of vanilla extract
1 1/2 cups of fresh strawberries

1 1/2 cups of fresh strawberries
Mix the eggs, sugar, and salt with 1/4 cup of milk
Add remaining milk and stir well
Heat the mixture in a double boiler or over low heat until it thickens slightly
Soften the gelatin in cold water and add to the warm mixture
Stir to combine
Add vanilla extract and let cool before refrigerating
Mix the strawberries with the remaining sugar
Just before serving, layer alternating layers of strawberries and creamy pudding in a tall glass or bowl
Serve 4-6 servings.
