1 1/2 tablespoons of unsalted gelatin
1/2 cup of cold water
2 egg yolks
1/3 cup of granulated sugar
1/3 cup of freshly squeezed orange juice
2 1/2 tablespoons of freshly squeezed lemon juice
1 pinch of salt
2 egg whites
1/4 cup of granulated sugar
1 1/2 tablespoons of unsalted gelatin
1/2 cup of cold water
2 egg yolks
1/3 cup of granulated sugar
1/3 cup of freshly squeezed orange juice
2 1/2 tablespoons of freshly squeezed lemon juice
1 pinch of salt
2 egg whites
1/4 cup of granulated sugar
Soak the gelatin in cold water
Heat and whisk over medium heat until the gelatin dissolves
Let it cool
Beat the egg yolks
Gradually add the sugar (1/3 cup), beating until thickened
Add the fruit juices, salt, and gelatin
Refrigerate until set, stirring occasionally
Beat the egg whites until fluffy and gradually add 1/4 cup of granulated sugar, whisking well
Combine with the egg yolk mixture
Place in a bowl
Refrigerate for several hours and serve over fresh fruits, such as bananas, apples, etc., sliced and cut into portions (4-6 per serving)
