Assemble the eggs, lemon juice, and vanilla in a bowl
Beat the mixture with an electric mixer until thick and foamy
Gradually add the ricotta, beating well to form a creamy consistency
Add the milk and beat again
Add your preferred sweetener, to taste
Refrigerate for later use
When serving, slice the bananas into rounds and arrange on 4 plates
Top each plate with the chilled ricotta mixture
Garnish with lemon zest
