Cut the manioc into pieces, peel and cook it in enough water to cover it until tender
In a saucepan, combine the water, sweetened condensed milk, and eggs
Bring to a boil, stirring constantly, then remove from heat
Transfer the cream to a bowl
Gradually add the cooked manioc to the processor with some of the cream and blend until smooth
Repeat the process until all the manioc and cream are used up
Add the vanilla extract and mix well
Cover and refrigerate or freeze
