1 1/4 cups milk chocolate chips (Sonksen's green package or bittersweet chocolate)

Melt the chocolate and almonds in a double boiler until the chocolate is smooth
Beat the whites until they form stiff peaks
Beat the yolks until they thicken and turn pale yellow
Combine the melted chocolate mixture with the yolk mixture, stirring well
Fold in the whipped cream, being careful not to deflate it
Place the mixture in a glass container that can be served chilled
Refrigerate for at least 4 hours
Before serving, top with whipped cream and chocolate shavings
