Batter
1 cup of wheat flour
1 cup of milk
4 tablespoons of melted butter
2 tablespoons of sugar
2 eggs
Filling
1/3 cup of orange juice
1/4 cup of sugar
1 tablespoon of butter
1 tablespoon of grated ginger
1 1/2 teaspoons of cinnamon powder
6 slices of canned papaya

Beat all the ingredients together in a blender until you get a smooth batter
Cover and refrigerate while preparing the filling
Filling

Melt the butter in a frying pan over medium heat

Add the sugar and mix well

Cook for 5 minutes, stirring occasionally or until the sugar caramelizes

Drain the papaya slices and place them in the frying pan

Caramelize both sides of the fruit

Remove, cut the fruit into pieces and reserve

Add the ginger to the frying pan with the caramel and orange juice

Stir and let it simmer for 4 minutes or until slightly thickened

Grease a non-stick frying pan with butter and heat it over high heat

When hot, add 1/4 cup of the batter and spread it evenly on the bottom of the pan

Cook for 40 seconds or until the bottom is golden brown

Flip and cook the other side until golden brown

Transfer to a plate and cover to keep the crepes warm

Repeat the process with the remaining batter

Add the papaya to the frying pan with the sauce and heat well

Arrange the crepes in individual plates and place the papaya in the center
