Peel and cook the potatoes in water with salt until they're very soft
Drain and mash them
Mix the milk and reserve it
In a pan, heat the olive oil and caramelize the onion until almost burnt
Mix into the reserved potatoes, add the ricotta cheese and season with salt and pepper

In a bowl, beat well the eggs, potato starch, milk, and salt
In a non-stick pan, heat a little olive oil and cook the crepes on both sides
Fill with the potatoes.
