1/2 cup cooked rice
1 package of cooked and well-drained endive
1 egg
a pinch of nutmeg
1/2 cup fresh bread crumbs
Salt and black pepper to taste
1/4 cup grated Parmesan cheese
Zest of 1/2 lemon, grated

Combine all ingredients in a blender until you get a creamy mixture (there's no need for the rice to be completely broken down)
If the mixture is too wet, add a little bit of bread crumbs
Dust hands with flour and shape into sausage-like croquettes
Dip in beaten egg and coat in breadcrumbs
Fry until golden.
