Wash the cod very well in several rinses
Place it in a bowl, cover with water, and let it soak for a day
Drain, cover with cold water, and simmer over medium heat for 20 minutes
Drain and reserve the liquid
Break down the cod into flakes
Cook the potatoes in the same liquid as cooked the cod, for about 30 minutes, until they are tender
Peel and slice the potatoes
Mince three eggs and set aside
Heat the olive oil in a skillet, add the onion and garlic, and fry for 5 minutes
Add the cod, potatoes, egg bits, and cook over high heat for 2 minutes, stirring constantly
Add the black pepper and white wine, and mix well
Pour this mixture into a refractory dish and bake in a strong oven (200°C) for 15 minutes
Slice the remaining eggs into rings
Garnish with eggs, sprinkle with parsley, and serve
Serve 6 portions.
